Someone more knowledgeable will know, but I'm not sure if the UVP will cover state lines, meaning you may need a NSW UVP as well.

The last car I sold privately I owned from new, so I showed the buyer the original contract of sale from the dealership as proof of ownership.

Vicroads dont keep records of the owners, they only have records of the registered operators (aka registration).
Registration and ownership are completely seperate things (but they are often the same person).
If the VIN is not coming up as stolen, then its pretty safe to accept possession as proof of ownership.
